Low-Cal, High Protein Breakfast Burrito😤🌯



I have to be honest with you guys, this is something that I NEVER thought i'd be making. I used to consume a lot of breakfast burritos in university and APPARENTLY so did my friend Carl. Carl, if you are reading this-- I literally only made this because you wanted me to. That being said, I'm sure there will be other people that enjoy this recipe. Why might I want a Low-Calorie, High Protein breakfast burrito? Well, the macros are great, can fit most diets, it's high protein (as mentioned), its a great breakfast on-the-go, AND you can meal prep it! As I went through the Research and development phases of this recipe, I found out that this is also a very cost-effective recipe and for me at least a good way to mix it up using very minimal ingredients. Before we get into the recipe, I want to talk to you guys about ways you can substitute this recipe to make these macros fit your dietary lifestyle.


substitute all egg whites for 2 eggs/ or 1 egg

  • Decreases your total fat intake

Substitute Ground beef/ground pork for Ground Turkey

  • This increases your total fat but depending on your store of choice MIGHT be cheaper (in mine it's actually cheaper protein to cost ratio for turkey )

  • you can also substitute tempeh or tofu if you're vegan/vegetarian or if you hate ground turkey/ground beef.

  • ALSO Since Thanksgiving is upon us, you can very well just use leftovers in the mixture to help get rid of them. This is a bit stronger of a flavour (especially if you use the dark meat) but its DELICIOUS 😍

Substitute Egg Wraps/Coconut wraps for whole wheat tortillas

  • This is a simple (and tasty) way to decrease your calories further. I've tested these. They both work very well in the recipe :)

Substitute Plain Greek Yogurt for Sour Cream

  • This adds extra protein without sacrificing taste!

Substitute Skim-milk cheese/ Light Cheese for Shredded Cheese

  • This (usually) lowers the fat, but in general, lowers the calories per serving

  • can also substitute dairy-free cheese to accommodate vegan/lactose intolerant needs.


Ingredients



  • 2 medium/large egg

  • 2 egg whites

  • 1/4 cup milk

  • 1/2 teaspoon salt

  • 0.75-1 pound turkey, ground

  • 1 tablespoon taco seasoning

  • 1 small onion, chopped

  • 15-ounce black beans drained, canned

  • 10-ounce tomatoes with green chilies, canned

  • 2 cup spinach

  • 6-7 medium tortilla, whole wheat

  • 75g shredded cheese

  • (if you like sour cream) 1 TSP per wrap sour cream.


Instructions



  • Place a large skillet over medium heat and coat with nonstick cooking spray.  In a medium bowl, whisk together eggs, milk, and salt.

  • Add eggs to hot pan and scramble. Once cooked, remove from pan.

  • Using the same pan, add ground turkey and taco seasoning.  Use a wooden spoon to break up the meat into small pieces.  Add chopped onions and continue to cook and stir until meat is cooked.

  • Drain and rinse black beans and add to the pan.  Drain the tomatoes and add to pan; stir and heat through.

  • Add in chopped spinach and cooked eggs. Stir to combine and remove the pan from the heat.

  • Warm tortillas in the microwave so they’re easy to roll and sprinkle with shredded cheese.  Place a small amount of filling along the center and roll into burritos. Serve warm!
