THE TASTIEST Healthy Blueberry Crumble (High Protein)






I'm going to be real with you guys. I may be a sports nutritionist, BUT guess what? First and foremost I am a human being. One with an insanely pervasive sweet tooth! My whole life, pre-and-post diabetes diagnosis, I have always been keen on sweets. Let me tell you, I don't discriminate either. I like rich, chocolatey cakes, I like sour candies, chewy caramels, and fruity pies. I love it all. That's why I take solace in finding recipes where I can enjoy all of the foods/flavors I love whilst still remaining FULLY on track towards my fitness goals.



I saw a TikTok with a recipe VERY similar to this and I decided to pay homage (to it because I can't find the original post), but try to do one better. I have no idea who's post it was as I didn't save it so very sorry but if I ever do find that post again, I'll be sure to link the account credits to the original/ post it at the bottom. I digress, I promise you this is the greatest macro-friendly pie-like blueberry crumble. Plenty of protein, ZERO guilt when consuming- all things considered, the perfect fruity dessert. So if you're looking to have a quick and easy blueberry dessert tonight, look no further.




Ingredients


  • 2.5 cups Frozen Blueberries

  • 2.5-3 scoops protein powder (I used BWS brand)

  • 1 cup rolled oats/quick oats

  • 1/4 cup lemon/lime juice (I prefer lemon but use whatever you got)

  • 2 tbsp/ 1/8 cup coconut oil (liquid)

  • 1/4 cup calorie-free pancake syrup (maple syrup works well, simply adjust calories)

  • splash of Vanilla extract

  • (Optional-For Topping) Greek Yogurt


Instructions


  1. Preheat the oven to 375F

  2. In a deep rim baking dish, mix together frozen blueberries, lemon juice, and 1/2 scoop protein powder until well coated

  3. In a separate large bowl, stir together oats and the rest of the protein powder

  4. Add vanilla extract, syrup, and coconut oil and stir until combined.

  5. Press down oats mixture to cover blueberry mixture until compact

  6. Bake for 35-40 minutes or until golden brown

  7. Top with greek yogurt, if desired. ✨ Enjoy ✨
